Overview

This qualification provides learners with specialist skills and knowledge of a range of commodities. Candidates will be introduced to the full range of products used within professional kitchens and will study topics such as meat & offal, fish & shellfish, breads and chocolate items. Candidates will also develop supervisory skills to include topics such as legal and social responsibilities and finance control. Included within the study programme learners will gain barista skills and complete a timed assessment to include drinks such as cappuccino, latte, espresso and smoothies.

How will it be delivered?

One externally set, externally marked exam under examination conditions. One externally set, externally moderated assignment, e-Portfolio management to assess candidates depth and breadth of understanding and structured work experience/placements where employers will be involved with setting assessments for a minimum of 49 hours. Assessments will be graded at Pass, Merit, Distinction and Distinction*

Entry requirements

You will need to have successfully completed the appropriate level 2 diploma, and have GCSE English Language and maths
